Sabudana Explosives (Sabudana Vada with a filling of hung curd)


INGREDIENTS

  • 1. For Vada - Sabudana: 1 cup
  • 2. Boiled and mashed potatoes: 7-8 medium-sized
  • 3. Sugar: 1 tbsp
  • 4. Lemon juice: 1 tbsp
  • 5. Cumin Seeds (Jeera):1 tsp
  • 6. Green Chillies: 2-3 finely chopped
  • 7. Corriander (Dhaniya): 2 tbsp
  • 8. Curry Leaves: 1 tbsp
  • 9. Roasted and crushed Peanuts: 1 cup
  • 10. Salt to taste
  • 11. Filling - Curd 2 cups
  • 12. Black Pepper powder: 1/2 tsp
  • 13. Black salt: 1/2 tsp
  • 14. Cumin Powder: 1/2 tsp
  • 15. Garam Masala: 1/2 tsp

INSTRUCTIONS

  1. 1. Wash the sabudana well and soak it in equal amounts of water for at least 4-5 hours.
  2. 2. Take the curd in a muslin cloth and tie it. Carefully squeeze out as much whey (curd water) as possible. Tie the curd for minimum 2-3 hours.
  3. 3. Take the hung curd in a bowl and add all the spices. Mix well.
  4. 4. Take soaked sabudana in a bowl, add all the ingredients and, mix and combine well.
  5. 5. Apply water on your palms. Take a big spoonful of sabudana mixture & flatten it on your palm.
  6. 6. Place a spoonful of hung curd mixture in the centre. Seal and shape into a tikki.
  7. 7. Fry in hot oil on medium high flame until crisp and golden brown. Let the vadas fry for at least 1 minute before turning them.
  8. 8. Serve them with green chutney, mint chutney or tomtao ketchup.
